If you’ve ever had trouble finding ways to use this humble root vegetable, here are some ideas for making your own potato chips.

What You’ll Need

Potatoes - For crispy, crunchy potato chips, you’ll want to use russet potatoes. They have a smooth texture that’s perfect for slicing thin, so you can make extra-crispy chips. Vegetable oil - A light vegetable oil, like canola oil, will give your potato chips a light, crispy texture. Salt - For flavor, of course. Pick up a fine grain salt, as larger crystals can leave visible chunks on your chips. Cookie sheet - To bake your potato chips right on the pan, you’ll need a non-stick cookie sheet. Baking sheet - When frying your potato chips, a rimmed baking sheet will help you collect any oil drippings.

Crispy and Crunchy Fried in Ketchup Chips

You can make oven-baked potato chips with both russet and sweet potatoes. While russet potatoes will produce extra-crispy chips, sweet potatoes will give you a more rustic chip. Sweet potatoes are a bit starchier than russet potatoes, so they’ll leave a little more texture. These chips are the easiest to make, since you don’t have to boil or fry the potatoes. Peel the potatoes and slice them thin. You can slice them by hand or use a mandolin to slice them super thin. Place the potato slices in a large bowl of water in the sink. This will prevent them from turning brown while you prep the rest of the ingredients. Preheat the oven to 450 degrees F. Drain the potatoes in the colander and pat them dry. Place the potato slices on a non-stick baking sheet and bake them in the oven for 15 minutes. While the chips are baking, place a paper towel on a plate. After 15 minutes, remove the baking sheet from the oven and place the chips on the paper towel to cool.

Tomato Ketchup and Crispy Potato Chips

To make crispy potato chips at home, you’ll need to slice your potatoes as thinly as possible. If you have a mandolin, you can slice the potatoes from top to bottom to get super thin slices, which will give you the perfect chip. If you don’t have a mandolin, you can use a very sharp knife or a vegetable slicer. For the best potato chip texture, use russet potatoes. Peel the potatoes, then slice them very thin. You can slice them by hand, or use a mandolin if you have one. Place a large bowl of water in the sink and have a colander ready. Bring a large pot of water to a boil. While the water is heating up, peel the potatoes and slice them thin. While the water is heating, place the potato slices in the large bowl of water in the sink. This will prevent the potato slices from turning brown. Once the water is boiling, drain the bowl of potatoes in the colander and add the potatoes to the boiling water. Boil the potatoes until they’re very soft, about 10 minutes. Drain the potatoes in the colander and pat them dry. Then, place the potato slices on a clean cutting board and use a very sharp knife or a vegetable slicer to slice the potatoes super thin. Aim for slices that are about 1/16 inch thick.

Crispy Fried Cheesy Potato Chips

Fried potato chips are extra crispy, but they’re also high in fat. However, you can reduce the fat content by using a combination of oil and butter. Peel and slice the potatoes as thin as possible. You can slice them by hand or use a mandolin to slice them super thin. Place the potato slices in a large bowl of water in the sink. This will prevent them from turning brown while you prep the rest of the ingredients. Bring a large pot of water to a boil. While the water is heating up, peel the potatoes and slice them thin. While the water is heating, place the potato slices in the large bowl of water in the sink. This will prevent them from turning brown. Once the water is boiling, drain the bowl of potatoes in the colander and add the potatoes to the boiling water. Boil the potatoes for 5 minutes, then drain them in the colander and pat them dry. While the potatoes are boiling, place a large pot on the stove and add the oil and butter. Heat the oil and butter until they’re sizzling. Be careful not to let the oil or butter smoke, or they will start to burn and become less healthy.
